Method

Steak Preparation

  1. 1

    Season the Steak

Rub the New York strip steaks with olive oil, salt, black pepper, and rosemary. Make sure to coat them evenly on both sides.

  2. 2

    Cook the Steak

Preheat a skillet over medium-high heat. Once hot, add the seasoned steaks and sear for 4-5 minutes on each side for medium-rare, or adjust cooking time to your desired doneness. Remove from the skillet and let rest for 5 minutes before slicing.

Wild Mushroom Risotto Preparation

  1. 3

    Prepare the Broth

In a saucepan, bring the chicken or vegetable broth to a simmer. Keep it warm on low heat.

  2. 4

    Sauté Aromatics

In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.

  3. 5

    Cook the Mushrooms

Add the wild mushrooms to the skillet and sauté until they are tender, about 5-7 minutes.

  4. 6

    Toast the Rice

Add the arborio rice to the skillet and stir for about 2 minutes, allowing it to toast slightly and absorb the flavors.

  5. 7

    Add Wine and Broth

Pour in the white wine and stir until it has mostly evaporated. Then, add the warm broth one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more. This process should take about 18-20 minutes until the rice is creamy and al dente.

  6. 8

    Finish the Risotto

Stir in the remaining tablespoon of butter and grated parmesan cheese. Season with salt and black pepper to taste.

Plating

  1. 9

    Serve the Dish

Spoon the wild mushroom risotto onto plates. Slice the rested steak and place it on top of the risotto. Garnish with chopped fresh parsley.
