Season the Steak
Rub the New York strip steaks with olive oil, salt, black pepper, and rosemary. Make sure to coat them evenly on both sides.

Prepare the Broth
In a saucepan, bring the chicken or vegetable broth to a simmer. Keep it warm on low heat.

Sauté Aromatics
In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute.

Toast the Rice
Add the arborio rice to the skillet and stir for about 2 minutes, allowing it to toast slightly and absorb the flavors.

Add Wine and Broth
Pour in the white wine and stir until it has mostly evaporated. Then, add the warm broth one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more. This process should take about 18-20 minutes until the rice is creamy and al dente.

Finish the Risotto
Stir in the remaining tablespoon of butter and grated parmesan cheese. Season with salt and black pepper to taste.
Plating

Serve the Dish
Spoon the wild mushroom risotto onto plates. Slice the rested steak and place it on top of the risotto. Garnish with chopped fresh parsley.
