Combine Ingredients
In a large mixing bowl, combine the carbonated water and sugar. Stir until the sugar is completely dissolved.

Add Flavors
Mix in the vanilla extract and root beer extract. If using, also add wintergreen, sarsaparilla, and licorice extracts for additional flavor.

Activate Yeast
In a small bowl, dissolve the yeast in a tablespoon of warm water (about 110°F or 43°C). Allow it to sit for about 5 minutes until it becomes frothy.

Combine Yeast with Mixture
Once the yeast is frothy, gently fold it into the root beer mixture. Be careful not to agitate the carbonated water too much.

Bottle the Mixture
Using a funnel, pour the mixture into clean, sanitized bottles, leaving about an inch of headspace at the top of each bottle.

Seal the bottles tightly and leave them at room temperature for 2 to 3 days to carbonate. Check daily to ensure the pressure does not build up too much; you can gently open one bottle to release gas if necessary.
