Soak the Beans
Rinse the red beans under cold water. Soak them in a bowl with enough water to cover them overnight. Drain before using.

Chop the Vegetables
Dice the red bell pepper, onion, and celery. Mince the garlic cloves.

Slice the Sausage
Slice the Andouille sausage into bite-sized pieces.
Cooking

Sauté Vegetables
In a large pot, heat the olive oil over medium heat. Add the diced onion, red bell pepper, and celery. Sauté for about 5 minutes until they are soft.

Combine Ingredients
Stir in the soaked red beans, chicken broth, Cajun seasoning, bay leaf, salt, and black pepper. Bring to a boil.

Simmer
Reduce the heat to low, cover, and let simmer for about 45 minutes, or until the beans are tender.

Cook Rice
While the beans are simmering, cook the long-grain rice according to package instructions.

Serve
Remove the bay leaf from the pot. Serve the red beans over the rice, garnishing with additional Cajun seasoning if desired.
