Polenta Preparation

    Boil Water

    In a large saucepan, bring 4 cups of water to a boil over medium-high heat.

    Add Cornmeal

    Once boiling, slowly whisk in 1 cup of cornmeal to prevent lumps.

    Cook Polenta

    Reduce heat to low and stir continuously for about 20-25 minutes until the mixture thickens and pulls away from the sides of the pan.

    Combine Ingredients

    Stir in 1 cup of milk, 2 tablespoons of butter, 1 teaspoon of salt, and 1/2 cup of grated Parmesan cheese until creamy.

    Season Polenta

    Season with black pepper to taste and remove from heat.

Vegetable Preparation

    Prepare Vegetables

    Wash and slice the zucchini and bell pepper into bite-sized pieces.

    Heat Oil

    In a skillet, heat 2 tablespoons of olive oil over medium heat.

    Sauté Garlic

    Add minced garlic (2 cloves) and sauté for 1 minute until fragrant.

    Cook Vegetables

    Add the sliced zucchini and bell pepper to the skillet and cook for 5-7 minutes until tender.

    Add Cherry Tomatoes

    Add 1 cup of cherry tomatoes and cook for an additional 3-4 minutes until they start to burst.

    Finish Vegetables

    Season with fresh basil to taste and remove from heat.
