Simple Syrup Preparation

Prepare Rosemary Simple Syrup
In a small saucepan, combine 1 cup of sugar and 1 cup of water. Add the fresh rosemary sprigs. Heat over medium heat, stirring until the sugar is completely dissolved. Bring to a gentle simmer and let it cook for about 5 minutes to infuse the rosemary flavor. Remove from heat and let it cool completely. Strain out the rosemary and store the syrup in an airtight container in the refrigerator.

Mix the Merrifield Pool Boy
In a cocktail shaker filled with ice, pour in the 1.5 oz of Blanco tequila, 0.5 oz of blue Curacao, 0.5 oz of peach liqueur, and 1 oz of freshly squeezed lime juice. Add 0.5 oz of the prepared rosemary simple syrup. Shake vigorously for about 15-20 seconds until well chilled.

Serve
Strain the mixture into a chilled cocktail glass or over ice in a rocks glass. Garnish with a sprig of rosemary and a lime wheel, if desired. Enjoy your refreshing Merrifield Pool Boy!
