Preparation of Smoked Acorn Squash

    Prepare the Acorn Squash

    Preheat your smoker or grill to 375°F (190°C). Cut the acorn squash in half lengthwise and scoop out the seeds.

    Season the Squash

    Brush the cut sides of the squash with olive oil, then season with salt, black pepper, and smoked paprika.

    Smoke the Squash

    Place the squash halves cut side down on the grill or smoker. Smoke for about 30-40 minutes or until the flesh is tender and easily pierced with a fork.

    Cool and Slice

    Once done, remove the squash from the grill/smoker and allow it to cool slightly. Scoop out the flesh and cut it into bite-sized pieces.

Assembling the Salad

    Prepare the Salad Base

    In a large bowl, add the mixed greens as the base.

    Add Squash

    Top the mixed greens with the smoked acorn squash pieces.

    Add Cheese and Optional Toppings

    Crumble the goat cheese over the salad. If using, add walnuts and dried cranberries.

Making the Dressing

    Combine Dressing Ingredients

    In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, salt, and black pepper.

    Emulsify the Dressing

    Slowly drizzle in olive oil while whisking continuously until the dressing is well combined and emulsified.

Final Assembly

    Dress the Salad

    Drizzle the dressing over the salad before serving.
