Method
Preparation

- 2
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in short bursts, stirring until smooth.
- 3
Mix Eggs and Sugar
In a separate bowl, whisk together the powdered sugar, large eggs, and egg yolks until the mixture is pale and fluffy.
- 4
Combine Mixtures
Slowly add the melted chocolate mixture to the egg mixture, stirring constantly to prevent the eggs from cooking. Add the vanilla extract and a pinch of salt, and mix until well combined.
- 5
Incorporate Flour
Gently fold in the all-purpose flour until just combined, being careful not to overmix.
- 6
Pour into Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
- 7
Bake the Cakes
Bake in the preheated oven for 12 to 14 minutes, until the edges are firm but the center is still soft and gooey.
Serving
- 8
Let Cool
Remove the ramekins from the oven and let them cool for 1 minute.
- 9
Invert and Serve
Carefully run a knife around the edges of the cakes to loosen them. Invert each ramekin onto a plate and gently tap to release the cake. Serve immediately with a scoop of vanilla ice cream on top. Sprinkle with chocolate shavings if desired.
