Bacon Mixture Preparation

Cook the Bacon
In a large skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and place on paper towels to drain excess grease.

Sauté the Onion and Garlic
In the same skillet, drain some of the bacon fat, leaving about 1 tablespoon. Add the chopped onion and minced garlic, sauté until softened and slightly caramelized, about 5-7 minutes.

Assemble and Bake

Prepare the Brie
Preheat your oven to 350°F (175°C). Place the brie cheese on a baking dish. Pour the apricot preserves over the top of the brie.

Add the Bacon Mixture
Spread the bacon mixture evenly over the apricot preserves on top of the brie.

Bake
Bake in the preheated oven for 15-20 minutes, or until the brie is soft and melted through.
Prepare Crostini

Slice the Baguette
While the brie is baking, slice the baguette into 1/2 inch thick slices.

Toast the Crostini
Brush each slice with olive oil and arrange on a baking sheet. Place in the oven for about 5-7 minutes until golden and crispy.
