Cooking the Pasta

    Cook Elbow Macaroni

    In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Making the Cheese Sauce

    Sauté Andouille Sausage

    In a large saucepan, melt butter over medium heat. Add diced Andouille sausage and sauté until browned, about 5-7 minutes.

    Create Roux

    Add flour to the sausage and stir for 1-2 minutes until mixture is golden. Gradually whisk in milk, stirring continuously until the mixture thickens.

    Add Cheeses

    Reduce heat to low and add cream cheese, cheddar cheese, Monterey Jack cheese, and half of the parmesan cheese. Stir until all cheese is melted and the sauce is smooth.

    Season the Sauce

    Add salt, black pepper, and cayenne pepper to taste. Mix well and combine with the cooked macaroni.

Preparing the Topping

    Mix Breadcrumb Topping

    In a small bowl, combine breadcrumbs, olive oil, remaining parmesan cheese, and chopped parsley. Mix until breadcrumbs are evenly coated.

Baking the Dish

    Combine and Bake

    Preheat your oven to 350°F (175°C). Pour the macaroni and cheese mixture into a greased baking dish. Evenly sprinkle the breadcrumb topping over the top. Bake for 25-30 minutes, or until the topping is golden brown and crispy.
