    Prepare the Salsa

    In a bowl, combine diced tomatoes, chopped onion, finely chopped jalapeño, lime juice, cilantro, salt, and pepper. Mix well and set aside.

    Cook the Rice

    In a saucepan, bring 2 cups of water to a boil. Add 1 cup of rice, cover, and reduce heat to low. Cook for 18-20 minutes until rice is tender and water is absorbed.

    Heat the Beans

    In a small pot, heat the black beans over medium heat until warmed through, adding salt to taste.

    Fry the Eggs

    In a skillet, heat olive oil over medium heat. Crack the eggs into the skillet and fry them to your desired doneness (sunny side up or over easy).

    Warm the Tortillas

    In another skillet, warm the corn tortillas on medium heat for about 30 seconds on each side until pliable.

    Assemble the Dish

    On each plate, place 2 warm tortillas. Top with a fried egg, a generous portion of salsa, and serve with a side of rice and beans.
