    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

    Prepare the Pancetta

    In a large skillet, heat the olive oil over medium heat. Add the chopped pancetta and cook until crispy, about 5-7 minutes. Add minced garlic and cook for an additional minute, stirring frequently.

    Make the Sauce

    In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.

    Combine

    Add the drained spaghetti to the skillet with pancetta. Remove from heat, and quickly pour the egg and cheese mixture over the hot pasta, stirring rapidly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Serve

    Season with additional salt and black pepper to taste. Serve immediately, garnished with extra Parmesan cheese if desired.
