Method

Preparing the Fish

    Make the Batter

    In a mixing bowl, combine 1 cup of all-purpose flour, 1 tsp of baking powder, 1 tsp of salt, and 1 tsp of black pepper. Gradually whisk in 1 cup of beer until the batter is smooth and free of lumps.

    Heat the Oil

    In a large pot or deep fryer, heat enough oil for frying (about 3-4 inches deep) to 350°F (175°C).

    Coat the Fish

    Dip each white fish fillet into the batter, ensuring it is fully coated.

    Fry the Fish

    Carefully place the battered fish into the hot oil, frying in batches if necessary. Cook for about 4-5 minutes or until golden brown and crispy. Remove and place on paper towels to drain excess oil.

Making the French Fries

    Prepare the Potatoes

    Peel the potatoes and cut them into thick strips to form fries. Rinse under cold water to remove excess starch.

    Fry the Potatoes

    Fry the cut potatoes in batches for about 5-7 minutes until they are golden brown and crispy. Remove and drain on paper towels. Season with salt to taste.

Preparing the Tartar Sauce

    Mix Ingredients

    In a small bowl, combine 1 cup of mayonnaise, 2 tbs of finely chopped dill pickles, 1 tbs of chopped capers, and 1 tbs of lemon juice. Mix well and season with salt and black pepper to taste.
