Brewing Directions
1. Mashing
Add the crushed Pilsner malt to 20 liters of water heated to 65°C. Hold this temperature for 60 minutes to allow the enzymes to convert starches into sugars.
2. Lautering
After mashing, drain the liquid (wort) from the grain bed. Rinse the grains with hot water at 75°C to extract as much sugar as possible.
3. Boiling
Bring the wort to a boil and add 50g of Saaz hops. Boil for 60 minutes and add 25g of Hallertau hops with 15 minutes remaining in the boil.
4. Cooling
Once the boiling is complete, cool the wort quickly to around 20°C using a wort chiller or an ice bath.
5. Fermentation
Transfer the cooled wort to a fermentation vessel and pitch the Pilsner yeast. Seal the vessel and allow it to ferment at around 12-15°C for 2 weeks.
6. Bottling
After fermentation is complete, bottle the beer with priming sugar if carbonation is desired. Let it carbonate for another 1-2 weeks.
