    Prepare the Elk Filet

    Season the elk filets with salt and black pepper. Heat olive oil in a skillet over medium-high heat.

    Sear the Elk Filet

    Sear the elk filets in the hot skillet for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let rest.

    Make the Demi Glaze

    In the same skillet, add the minced shallots and garlic. Sauté until softened, about 2 minutes.

    Add Mushrooms

    Add the wild mushrooms to the skillet and cook until they are tender and browned, about 5 minutes.

    Deglaze the Pan

    Pour in the red wine, scraping the bottom of the skillet to release any browned bits. Bring to a simmer and let it reduce by half.

    Add Stock

    Add the beef stock and fresh thyme. Simmer until the sauce thickens, about 10 minutes.

    Finish the Sauce

    Stir in the butter and season with salt and pepper to taste. Remove from heat.

    Slice the elk filet and plate it. Spoon the wild mushroom demi glaze over the top and garnish with fresh parsley.
