Method

Preparation of Rice

  1. 1

    Cook the Rice

Rinse the rice under cold water until the water runs clear. In a pot, combine 1 cup of rice with 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed. Fluff with a fork and set aside.

Preparing Tuna and Slaw

  1. 2

    Prepare the Ahi Tuna

Season the ahi tuna with salt and pepper. Heat a non-stick skillet over high heat. Sear the tuna for about 1-2 minutes on each side until it is browned on the outside but still rare in the center. Remove from heat and let rest before slicing thinly.

  2. 3

    Make the Napa Slaw

In a bowl, combine the shredded napa cabbage with ponzu sauce. Toss well to coat the cabbage evenly. Set aside to allow the flavors to meld.

Making Guacamole and Sriracha Aioli

  1. 4

    Prepare the Guacamole

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until smooth. Stir in lime juice and salt to taste.

  2. 5

    Make the Sriracha Aioli

In a small bowl, combine mayonnaise and sriracha. Mix until well combined. Adjust the spiciness by adding more sriracha if desired.

Assembly

  1. 6

    Assemble the Dish

On a plate, layer the cooked rice as a base. Top with sliced ahi tuna, napa slaw, and sliced cucumbers. Add a dollop of guacamole and sriracha aioli on the side. Serve immediately.
