Prepare Sushi Rice

Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Cook according to the package instructions.

Season the Rice
Once the rice is cooked, transfer it to a bowl. Mix the rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold this mixture into the warm rice. Allow the rice to cool to room temperature.

Slice Tuna
Using a sharp knife, slice the fresh tuna into thin strips or cubes, depending on your preference.

Chop Cucumber
Peel the cucumber if desired, then slice it into thin strips.

Lay Out Nori
Place a sheet of nori on a bamboo sushi mat or a clean surface, shiny side down.

Add Sushi Rice
Wet your hands to prevent sticking and take a handful of sushi rice. Spread the rice evenly over the nori, leaving about 1 inch at the top edge.

Roll the Sushi
Using the sushi mat, carefully roll the nori away from you, applying gentle pressure to form a tight roll. Seal the edge with a bit of water.

Slice and Serve
Using a sharp knife, slice the roll into bite-sized pieces. Sprinkle with sesame seeds and serve with soy sauce and wasabi on the side.
