Pasta Dough Preparation

Mixing the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms.

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Combining the Filling
In a mixing bowl, combine the ricotta cheese, Parmesan cheese, cooked spinach, nutmeg, salt, and black pepper. Mix until well combined and set aside.

Rolling Out the Dough
After resting, roll out the pasta dough into thin sheets using a pasta machine or a rolling pin. Cut into squares or circles, depending on your preference.

Place a small spoonful of the filling in the center of each pasta square or circle. Fold over and seal the edges, ensuring no air is trapped inside.

Adding Cream and Cheese
Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese, and season with salt and black pepper. Cook for another 3-5 minutes until slightly thickened.

Bring a large pot of salted water to a boil. Gently add the filled pasta and cook for 3-4 minutes or until they float to the surface and are tender.
