Method

Roasting the Chicken

    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Rinse the whole chicken under cold water and pat it dry with paper towels. Season the inside and outside of the chicken generously with salt and pepper.

    Roast the Chicken

    Place the seasoned chicken in a roasting pan. Roast for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste with its own juices every 30 minutes.

    Rest the Chicken

    Once cooked, remove the chicken from the oven and let it rest for at least 15 minutes before carving.

Cooking the Rice

    Cook the Rice

    In a medium saucepan, bring 4 cups of water to a boil. Add 2 cups of rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.

Preparing the Vegetables

    Chop the Vegetables

    Dice the tomatoes and slice the green onions. Set aside. If you have not already, chop the roasted red peppers into bite-sized pieces.

Making the Cilantro Lime Aioli

    Prepare the Aioli

    In a food processor, combine mayonnaise, fresh cilantro, lime juice, garlic cloves, salt, and pepper. Blend until smooth and creamy. Adjust seasoning as needed.

Assembling the Dish

    Serve the Dish

    On a large serving platter, place a generous portion of rice. Carve the roasted chicken and arrange it on top of the rice. Add diced tomatoes, pickled onions, roasted red peppers, and sliced green onions. Finally, serve with mixed greens on the side and drizzle the cilantro lime aioli over the top.
