Pulled Pork

Taco Assembly

Method

Prepare the Pulled Pork

  1. 1

    Season the Pork

In a large bowl, mix together the garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub this seasoning mix all over the pork shoulder.

  2. 2

    Cook the Pork

Place the seasoned pork shoulder in a slow cooker. Pour the water and barbecue sauce over the pork. Cover and cook on low for 8 hours or until the pork is tender and easily shreds with a fork.

  3. 3

    Shred the Pork

Once cooked, remove the pork from the slow cooker and let it rest for a few minutes. Using two forks, shred the pork into bite-sized pieces. Mix the shredded pork with the remaining barbecue sauce in the slow cooker.

Assemble the Tacos

  1. 4

    Prepare the Toppings

Finely chop the red onion and rinse and chop the fresh cilantro. Cut the lime into wedges.

  2. 5

    Warm the Tortillas

In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

  3. 6

    Build the Tacos

On each tortilla, add a generous portion of the pulled pork. Top with chopped red onion and fresh cilantro. Squeeze fresh lime juice over the top to taste.
