Cooking Quinoa

    Rinse the Quinoa

    In a fine mesh strainer, rinse the quinoa under cold running water for about 1-2 minutes to remove its natural coating, called saponin, which can make it taste bitter.

    Cook the Quinoa

    In a medium saucepan, combine rinsed quinoa and water. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Preparing Vegetables

    Dice the Vegetables

    While the quinoa is cooking, prepare the vegetables by dicing the bell pepper, cucumber, and red onion, and halving the cherry tomatoes.

Making the Dressing

    Combine Dressing Ingredients

    In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper until well combined.

Assembling the Salad

    Combine Ingredients

    In a large bowl, fluff the cooked quinoa with a fork and add the diced vegetables and optional protein (if using). Pour the dressing over the salad and toss gently to combine.

    Garnish and Serve

    Top the salad with fresh parsley and crumbled feta cheese. Serve immediately or chill in the refrigerator for 30 minutes before serving.
