Black Bean Hummus

    Prepare the Hummus

    In a food processor, combine the canned black beans, tahini, garlic, lime juice, olive oil, cumin, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Rice

    Cook the Rice

    In a saucepan, combine the rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and water is absorbed. Fluff with a fork and set aside.

Roasted Peppers

    Roast the Peppers

    Preheat your oven to 400°F (200°C). Slice the bell peppers in half, remove the seeds, and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt. Roast in the oven for about 20-25 minutes or until they are tender and slightly charred.

Pickled Onion

    Pickle the Onions

    Slice the red onion thinly and place it in a jar. In a small saucepan, combine white vinegar, water, sugar, and salt. Bring to a simmer until the sugar dissolves, then pour the mixture over the onions in the jar. Let it cool to room temperature, then refrigerate for at least 30 minutes before using.

Mixed Greens

    Prepare the Mixed Greens

    Wash and dry the mixed greens thoroughly. Set aside for assembly.

Green Onion

    Chop the Green Onions

    Chop the green onions into small pieces, both the white and green parts. Set aside for garnish.

Cilantro Lime Aioli

    Make the Aioli

    In a bowl, mix together the mayonnaise, chopped cilantro, lime juice, and garlic powder until well combined. Adjust seasoning to taste.
