Prepare the Calamari
Clean the calamari by removing the head, internal organs, and the thin plastic quill. Cut the body into rings, about 1/2 inch thick.

Set Up Breading Station
In a shallow bowl, whisk together the flour, cornstarch, salt, black pepper, paprika, and garlic powder. In another bowl, whisk the eggs and milk together until well combined.

Bread the Calamari
Dip each calamari ring into the egg mixture, allowing the excess to drip off, then dredge in the flour mixture until evenly coated. Set aside on a plate.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add the Tomatoes
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, red pepper flakes, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for 20-30 minutes, stirring occasionally to prevent sticking.

Adjust Seasoning
Taste the sauce and adjust seasoning if necessary. Remove from heat and set aside.
