Brisket Preparation

Season the Brisket
In a small bowl, mix together smoked paprika, garlic powder, onion powder, cumin, salt, and black pepper. Rub the mixture evenly over the beef brisket.

Sear the Brisket
In a large skillet, heat olive oil over medium-high heat. Once hot, sear the brisket on all sides until browned, about 5 minutes per side.

Smoke the Brisket
Transfer the brisket to a smoker set to 225°F (107°C) and smoke for approximately 8-10 hours, or until the internal temperature reaches 195°F (90°C). Allow the brisket to rest for 30 minutes before slicing.

Prepare the Pickling Liquid
In a small saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, stirring until sugar and salt are dissolved.

Warm the Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

Assemble the Tacos
Slice the smoked brisket against the grain into thin strips. Place a few pieces of brisket on each tortilla, top with pickled onions, and sprinkle with fresh cilantro.

Serve with Lime
Serve the tacos with lime wedges on the side for squeezing over the top before eating.
