    Prepare the Chicken

    In a bowl, combine buttermilk, salt, pepper, paprika, garlic powder, and chopped fresh sage. Add chicken thighs and marinate for at least 1 hour, preferably overnight in the refrigerator.

    Fry the Chicken

    In a large skillet, heat vegetable oil over medium-high heat. Remove chicken from marinade, allowing excess to drip off, then dredge in flour. Fry chicken in hot oil for about 6-8 minutes on each side, or until golden brown and cooked through. Drain on paper towels.

    Make the Waffles

    In a bowl, combine flour, baking powder, sugar, and salt. In another bowl, whisk eggs, milk, and melted butter. Combine wet and dry ingredients, mixing until just combined. Pour batter into a preheated waffle iron and cook according to manufacturer's instructions.

    Prepare the Toppings

    Cook smoked bacon until crispy. Slice market tomato.

    Serve fried chicken on top of waffles, topped with crispy bacon and slices of tomato. Garnish with fresh rosemary.
