Method

Cocktail

1

Chill glass

Place a rocks glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the drink to ensure it is well chilled.

2

Measure and combine

In a mixing glass add 2 oz bourbon, 0.75 oz dry vermouth, 0.25 oz yellow Chartreuse, 0.25 oz pure maple syrup, 2 dashes Angostura bitters and 1 dash orange bitters.

3

Stir with ice

Fill the mixing glass with large, cold ice. Stir gently but thoroughly for 20–30 seconds (about 15–20 full strokes) until the mixture is well chilled and slightly diluted. Aim for a cold, silky texture rather than rapid dilution.

4

Prepare glass

Discard the chilling ice or remove the glass from the freezer. If you used ice water, empty and dry the glass. Place a single large ice cube into the chilled rocks glass.

5

Strain

Double-strain the cocktail from the mixing glass into the prepared rocks glass over the large ice cube using a Hawthorne or julep strainer to keep any small ice shards out.

Garnish & Serve

6

Express orange oil

Take a fresh strip of orange peel, hold it skin-side down over the drink and give it a firm twist to express the oils across the surface. Rub the peel around the rim of the glass if desired, then drop it into the drink or set it on the ice.

7

Serve immediately. The cocktail is best enjoyed slowly so the flavors evolve as the ice melts. Provide a short stirring spoon or napkin if serving to guests.
