Make burger sauce

In a small bowl, combine mayonnaise, yellow mustard, ketchup, Worcestershire sauce, sweet relish, and a pinch of black pepper. Stir until smooth. Taste and adjust seasoning. Set aside in refrigerator while you cook the burger.

Burger Patty

Form and season patty

Gently shape the 0.25-lb portion of ground chuck into a patty about 3.5–4 inches in diameter and roughly 3/4 inch thick. Make a shallow dimple in the center with your thumb to help it cook evenly. Season both sides with the measured kosher salt and freshly ground black pepper.

Cook patty

Heat a cast-iron skillet or heavy griddle over medium-high heat until hot (about 2–3 minutes). Add 1/2 tsp vegetable oil and swirl to coat. Place the patty in the pan and cook undisturbed for 3 minutes to develop a brown crust. Flip and cook the second side for 2 minutes. Reduce heat to medium and place the cheddar slice on the patty; cover the pan (or tent with foil) and cook 1–2 minutes more until cheese is melted and internal temperature reaches 155–160°F for a well-done pub-style burger (or 140–145°F for medium). Remove patty and let rest on a plate for 1–2 minutes.

Toast bun

While the patty rests, spread 1/2 tsp softened butter on the cut sides of the bun. Place the bun, cut-side down, in the same skillet over medium heat for 30–45 seconds until golden and lightly crisp. Remove from heat.

Assemble burger

Spread about half of the prepared sauce on the bottom bun. Place leaf lettuce on the sauce, then the rested cheeseburger patty. Add tomato slices, red onion rings, and dill pickle slices on top of the patty. Spread remaining sauce on the top bun and set it on the assembled burger.

Serve

Serve immediately while hot with your choice of fries or chips. Provide extra sauce on the side if desired.
