Prepare

Chill a coupe or rocks glass by filling it with ice and set aside. If using an egg white, separate the white from the yolk and keep chilled.

Dry shake

In a cocktail shaker, add bourbon, fresh lemon juice, fresh orange juice, simple syrup, orange bitters, and the egg white (if using). Seal the shaker and dry shake vigorously (no ice) for 15–20 seconds to build a frothy emulsion.

Wet shake

Open the shaker, add plenty of ice, and shake again for 10–15 seconds until well chilled and slightly diluted.

Strain

Discard ice from the chilled glass. Double-strain the cocktail into the chilled glass using a Hawthorne and fine mesh strainer to remove ice shards and any coagulated egg bits, producing a silky texture.

Garnish & serve

Express the oils of the orange twist over the drink by holding the twist skin-side down above the glass and giving it a firm squeeze. Rub the twist around the rim and drop it into the drink. Serve immediately.
