Roast poblanos
Preheat your broiler or a gas flame. Place the poblanos on a baking sheet (if broiling) or hold with tongs over the flame and char until blackened and blistered on all sides, about 8–10 minutes total. Transfer to a bowl and cover tightly with plastic wrap or a lid to steam for 10 minutes. Once cool, peel off skins, remove stems and seeds, and roughly chop. Reserve.
Marinate chicken
In a medium bowl combine chopped roasted poblanos, lime juice, olive oil, minced garlic, cumin, oregano, smoked paprika, kosher salt and black pepper. Add the chicken thighs and toss to coat completely. Cover and refrigerate for at least 30 minutes and up to 4 hours (30 minutes is sufficient if short on time).
Cook chicken
Heat a large skillet or cast-iron pan over medium-high heat. Add 1 tsp oil if needed and place the marinated chicken thighs in the pan, letting excess marinade drip off. Cook 5–7 minutes per side, until nicely browned and internal temperature reaches 165°F (74°C). Remove chicken to a cutting board and let rest 5 minutes, then slice or shred into bite-size pieces. Reserve any pan juices.

Sear corn
In the same skillet over medium-high heat add butter or neutral oil. Add the corn kernels and 1/2 tsp salt. Sauté until corn is golden in spots and slightly caramelized, about 5–7 minutes, stirring occasionally. If there are flavorful brown bits from the chicken, scrape them into the corn for extra flavor. Remove from heat and set aside.
Assembly & Garnish
Drizzle with Mexican crema or sour cream and a little hot sauce or salsa verde to taste. Serve immediately with lime wedges on the side for squeezing over the tacos.
