Prepare glass (optional salted rim)
If you prefer a salted rim, rub a lime wedge around the outer rim of a highball or Collins glass, then dip the rim into a shallow dish of coarse salt to coat. Set the glass aside.
Build the cocktail
Fill a cocktail shaker halfway with ice. Add 2 oz Teremana Blanco tequila, 1 oz fresh grapefruit juice, 0.5 oz fresh lime juice and 0.5 oz simple syrup. Cap the shaker and shake vigorously for 8–10 seconds until well chilled.
Strain and top
Fill the prepared glass with fresh ice (cubed). Double-strain the shaken mixture into the glass over the ice to remove any pulp. Top gently with 3 oz Fever-Tree Sparkling Pink Grapefruit, pouring slowly to preserve fizz. Give the drink a very light stir (1–2 rotations) to integrate the mixer without flattening the bubbles.
Garnish and serve
Garnish with a grapefruit wheel on the rim and a lime wedge. Serve immediately with a straw if desired.
