Method
Cocktail Assembly
Chill glass and prepare ice
Place the rocks glass in the freezer or fill with ice water to chill while assembling other components. Prepare one large, clear ice cube and set aside.
Build the cocktail
In a mixing glass combine 2 oz 1792 Small Batch Bourbon, 0.25 oz house-made simple syrup, and 3 dashes Angostura bitters. Add one Filthy® Black Cherry (drop it into the mixing glass). Fill the mixing glass with ice and stir with a bar spoon for 20–30 seconds until well-chilled and slightly diluted (around 15–20% dilution).
Prepare the serving glass
Empty the chilled rocks glass of any ice water, place the large ice cube in the glass, then strain the stirred cocktail over the ice cube into the chilled glass using a julep strainer or Hawthorne.
Express orange oils
Hold the orange peel skin-side down over the drink and give it a firm twist to express the oils across the surface. Run the peel along the rim of the glass and drop it into the cocktail as garnish (or set aside for tableside smoke finish).
Smoking Tableside
Set up smoking apparatus
Place approximately 1/4 cup hardwood chips on a heatproof surface or in the bowl of a smoking gun. Position the cloche or mixing glass over the serving rocks glass (inverted over the glass and ice cube), leaving a small gap or route for smoke to travel if using a torch; if using a smoking gun, insert the gun nozzle under the cloche so smoke will collect inside.
Generate smoke
If using a torch: carefully ignite the wood chips with the handheld torch until they begin to smolder and produce smoke, then immediately extinguish the flame and let the chips smolder. If using a smoking gun: load chips and start the gun to push smoke under the cloche. Allow smoke to fill the cloche and surround the glass for 10–20 seconds to achieve a visible plume of smoke inside.
Trap the smoke and finish
Quickly invert the cloche down over the glass (or ensure the mixing glass covering the glass is sealed) and let the cocktail sit in the trapped smoke for 15–30 seconds depending on desired intensity. Lift the cloche to release a dramatic plume of smoke tableside, allowing residual smoke to swirl into the cocktail and aroma to concentrate.
Final garnish and serve
Optionally express another quick orange peel twist directly into the smoked glass to add bright citrus oils on top of the smoke aroma. Garnish with the Filthy® Black Cherry perched on a pick and present to guest immediately while aromatic smoke is still apparent.
House-made Simple Syrup (1:1)
Combine 1 cup granulated sugar and 1 cup water in a small saucepan over medium heat. Stir until sugar dissolves completely and mixture is clear. Remove from heat and cool. Store refrigerated in a sealed container up to 2 weeks. Use 0.25 oz per cocktail as noted above.
