Prep & Season
Pat and season chicken
Pat chicken thighs dry with paper towels. Season both sides evenly with kosher salt (1.5 tsp), black pepper (1 tsp), smoked paprika (1 tsp) and garlic powder (1 tsp). Let rest at room temperature for 15 minutes to allow seasoning to penetrate.
If you have time, refrigerate covered for up to 2 hours to intensify flavor; bring back to room temperature before cooking.
Sear Chicken
Place chicken thighs in the pan, presentation side down, without crowding. Sear 4–5 minutes until a deep golden-brown crust forms. Flip and sear the other side 3–4 minutes. Transfer chicken to a plate; it will finish cooking in the sauce. Reduce heat to medium.
Make Redemption Sauce
In the same skillet, add 2 tbs unsalted butter. Once melted, add the diced onion (1/2 cup) and a pinch of salt. Cook, stirring occasionally, 4–5 minutes until translucent and soft.
Add minced garlic (4 cloves) and cook 30–45 seconds until fragrant but not browned.
Stir in tomato paste (2 tbs) and cook 1–2 minutes, stirring constantly, to caramelize and deepen flavor.
Add light brown sugar (2 tbs), apple cider vinegar (3 tbs), Dijon mustard (1 tbs), soy sauce (1 tbs), hot sauce (1 tsp), 3 tbs chicken stock (or water) and smoked paprika (1/2 tsp). Stir to combine, scraping up any browned bits from the pan. Simmer gently 3–4 minutes to meld flavors.
Taste and adjust: add lemon juice (1 tbs) for brightness, or an extra teaspoon of vinegar or sugar to balance acidity and sweetness.
Finish Chicken in Sauce
Return seared chicken thighs to the skillet, nestling them into the sauce. Reduce heat to low, cover partially, and simmer gently 8–12 minutes until internal temperature reaches 165°F (74°C) and sauce thickens slightly. Spoon sauce over chicken occasionally.
If sauce reduces too quickly, add up to 1–2 tbs additional stock or water and continue simmering until chicken is cooked through.
Glaze & Mount
Remove chicken to a serving platter. Whisk in honey (1 tbs) and cold cubed butter (1 tbs) into the skillet sauce off heat to gloss and thicken the sauce (monter au beurre). Stir in chopped parsley (2 tbs).
Taste and season with additional salt or pepper if needed. Spoon the glossy Redemption sauce generously over the chicken. Sprinkle toasted sesame seeds (optional, 1 tsp) over the top and garnish with lemon wedges.
Serve
Leftovers: store chicken and sauce in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat, adding a splash of water or stock to loosen sauce if needed.
