Method
Prepare Peach Purée (if not using pre-made)
Make purée
Place the peeled, chopped ripe peach and an additional 0.5 oz simple syrup in a blender. Purée until completely smooth, about 20–30 seconds. If desired, pass through a fine mesh strainer to remove fibrous bits. Measure 1 oz purée for the cocktail and refrigerate remaining purée for up to 3 days.
Build & Shake
Muddle mint (light)
In a cocktail shaker, add 3 mint sprigs and the 0.5 oz house-made simple syrup. Gently clap the mint between your hands to release aroma, then lightly muddle the mint with the syrup three to five times — do not over-muddle to avoid bitterness.
Combine base
Add 2 oz Elijah Craig Small Batch Bourbon, 1 oz peach purée, and 0.75 oz fresh lemon juice to the shaker with the muddled mint and syrup.
Shake with ice
Add ice to the shaker (enough to fill) and shake vigorously for 10–15 seconds until well chilled.
Assemble & Serve
Prepare glass
Fill a double old-fashioned glass (or rocks glass) with crushed ice to the top.
Double strain
Double strain the shaken mixture over the crushed ice using a Hawthorne strainer and a fine mesh strainer to remove mint bits and any peach solids.
Top and finish
Top the drink with approximately 2 oz soda water. Gently stir once or twice with a bar spoon to integrate soda without flattening the bubbles.
Garnish
Slap the remaining mint sprig between your palms to awaken the oils, then place it on top of the drink along with a peach slice on the rim or floated on the ice.
Serve
Serve immediately with a short straw. Encourage the guest to gently stir occasionally to keep flavors integrated.
