Macaroni & Cheese
Cook pasta
Bring 1 cup of water to a gentle boil in a small pot. Add a pinch of salt and the 1/2 cup dry elbow macaroni. Cook uncovered until just al dente (about 6–7 minutes). Drain thoroughly and set aside to cool slightly.
Make cheese sauce
In the same small pot, melt 1/2 tbsp butter over low heat. Sprinkle 1/2 tsp flour into the butter and stir for 30 seconds to cook the raw flour taste, keeping heat low so it doesn't brown. Slowly whisk in 3 tbsp whole milk, smoothing out lumps, and keep stirring until mixture slightly thickens (1–2 minutes).
Finish sauce
Remove the pot from heat and stir in 1/2 cup finely grated sharp cheddar and 1 tbsp softened cream cheese until smooth. Season with 1/8 tsp sea salt and a pinch of black pepper. Taste and adjust seasoning as needed.
Combine
Return to very low heat if needed, stir in the drained macaroni until evenly coated with the cheese sauce. Cook and stir 30–60 seconds so sauce clings to pasta. Transfer to a small bowl and let cool to lukewarm (10–15 minutes). For quicker cooling, spread macaroni on a small plate in an even layer.
Forming & Coating
Prepare coating station
Place 1 tsp flour on a small plate. On a second plate combine 1/2 cup panko breadcrumbs and 1/2 tsp fine cornmeal (if using). Place 1/2 beaten large egg in a small shallow bowl (if you have remaining egg it can be saved). Heat 2 tbsp vegetable oil in a small nonstick skillet over medium heat — you want oil hot but not smoking; test with a few breadcrumb crumbs which should sizzle gently.
Shape mac'n cheese bites
Using a tablespoon or small scoop, portion the cooled mac'n cheese into 6 small mounds (each about 1 tbsp) or fewer larger bites depending on desired size. Lightly wet your hands to prevent sticking and, if mixture is loose, refrigerate the mounds on a tray for 10–15 minutes to firm up. If still sticky, dust each mound lightly with the 1 tsp flour before coating.
Coat
Working one at a time: gently roll a mound in the flour (shake off excess), dip into the beaten egg to fully coat, then press into the panko mixture to cover completely. Place each coated bite on a plate and repeat until all are coated.
Fry
Carefully add the bites to the preheated skillet (do not overcrowd; fry in one layer). Fry 1–1.5 minutes per side until golden brown and crisp, using a spatula to turn gently. If they brown too fast, reduce heat. Total frying time about 3–4 minutes. Transfer to a paper towel-lined plate to drain briefly.
Dipping Sauce
While bites cool slightly, whisk together 1 tbsp mayonnaise, 1 tsp ketchup, 1/4 tsp hot sauce, 1/2 tsp lemon juice, 1/8 tsp smoked paprika and a tiny pinch (1/16 tsp) salt in a small ramekin until smooth. Taste and adjust heat or acidity as preferred.
Serve the warm mac'n cheese bites immediately with the dipping sauce. Makes 6 small bites — one serving.
