Prepare glass
Select a chilled old-fashioned glass. If desired, chill the glass by placing it in the freezer for 5–10 minutes or fill with ice water while preparing the cocktail.
Combine ingredients
Add the large ice cube (or 2–3 large cubes) to the chilled old-fashioned glass. Pour 2 oz Knob Creek bourbon over the ice. Add 1/2 teaspoon simple syrup and 2 dashes Angostura bitters.
Stir
Using a bar spoon, stir gently for 20–30 seconds (about 20–30 turns) to chill and dilute the drink evenly. Aim for slight dilution to open the bourbon's flavors without overwatering.
