Method
Burger Patties
Prepare the meat
Place the ground beef in a large bowl. Add Worcestershire sauce, kosher salt, and freshly ground black pepper. Gently combine with your hands or a fork just until incorporated; avoid overmixing to keep patties tender.
Form patties
Divide the seasoned beef into 4 equal portions (about 5 oz / 140 g each). Gently shape each portion into a patty about 3/4" thick and slightly wider than the buns. Make a shallow dimple in the center of each patty with your thumb to reduce puffing while cooking.
Cook patties
Heat a cast-iron skillet or griddle over medium-high heat and add the neutral oil. When shimmering, place patties on the hot surface, leaving space between them. Cook for 3-4 minutes without moving, until a brown crust forms. Flip and cook 2-3 minutes on the second side for medium (adjust time +/- for desired doneness). In the last 30-45 seconds of cooking, place a slice of your chosen cheese on each patty and cover the skillet or tent with foil to melt.
Buns & Condiments
Spread mayonnaise
Spread about 1 tablespoon of mayonnaise on the bottom half of each toasted bun (use remaining mayo as needed).

Slice vegetables
Slice the tomato into 4 even slices. Slice the red onion into thin rings and separate into individual ring pieces. Pat lettuce leaves dry and tear larger leaves to fit buns if necessary.
Season tomato
Lightly season tomato slices on both sides with the measured salt and black pepper.
Assembly
On each mayo-spread bottom bun, layer: 2 lettuce leaves, a seasoned tomato slice, red onion rings (as desired), and 3-4 pickle slices. Place the hot, cheese-melted burger patty on top of the pickles. Finish with the toasted top bun.
Serve immediately with extra mayonnaise, additional cheese slices, or other condiments on the side so guests can customize their burgers at the burger bar.
