Honey-Ginger Syrup

Prepare syrup

Combine 0.5 cup honey and 0.5 cup water in a small saucepan. Add the sliced peeled ginger. Warm gently over medium-low heat, stirring until honey fully dissolves. Bring to a very gentle simmer for 5 minutes to infuse ginger flavor (do not vigorously boil). Remove from heat and let steep 20–30 minutes for stronger ginger character. Strain out the ginger and cool. Syrup will keep refrigerated in a sealed container for up to 2 weeks.

Build and shake

Fill a cocktail shaker with ice (about 1 cup). Add 2 oz Balcones whiskey, 0.75 oz fresh lemon juice, 0.5 oz honey-ginger syrup, 0.25 oz Aperol and 2 dashes Angostura bitters. Cap the shaker and shake vigorously for about 12–15 seconds until well-chilled (shake longer if using oversized ice).

Strain and top

Double-strain the mixture into a chilled rocks glass filled with fresh ice. Top with 1 oz soda water to brighten and add effervescence; gently stir once to combine (one medium stir).

Garnish and serve

Garnish with a piece of candied ginger or a dehydrated lemon wheel on the rim. Serve immediately.
