Burger Patties
Form the patties
Place the ground beef in a bowl. Sprinkle kosher salt, black pepper, and Worcestershire sauce (if using) over the meat. Gently mix with your hands until just combined — do not overwork. Divide the meat into four equal portions (about 4 oz each). Shape each portion into a loose ball and then flatten into 3/4-inch thick patties about 4 inches in diameter, leaving the center slightly thinner or making a shallow dimple to prevent puffing during cooking.
Cook the patties
Place the patties on the hot skillet or grill, leaving space between them. Cook undisturbed for 3–4 minutes until a brown crust forms on the bottom. Flip once and cook for another 2–3 minutes for medium doneness (adjust time +/- for preferred doneness). During the last 1 minute of cooking, place one slice of American cheese on each patty and cover the skillet or close the grill lid briefly to melt the cheese.
Buns & Toppings
Prep produce
While the patties cook, slice the tomato into 1/4-inch thick slices. Thinly slice the red onion into rings. Separate and rinse iceberg lettuce leaves and pat dry. Have pickle slices ready.
Assemble & Serve
Spread about 1 teaspoon of mayonnaise (if using) on the bottom bun. Add a lettuce leaf, then place a cheeseburger patty on top.
Serve immediately with fries or your preferred side. Repeat assembly for remaining burgers.
