Cocktail
Swicy concentrate (makes ~6 oz)
Garnish
Method
Swicy concentrate (make ahead)
- 1
Make simple spicy-sweet concentrate
Combine 0.5 cup water and 0.5 cup granulated sugar in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture comes just to a simmer.
- 2
Add 2 tablespoons sliced fresh ginger and 1/2 small sliced jalapeño to the syrup. Continue to simmer on low for 5 minutes to infuse heat and ginger aroma, stirring occasionally.
- 3
Remove from heat, stir in 1 teaspoon lime zest and 1 tablespoon fresh lime juice. Let the concentrate cool to room temperature, then taste: if too spicy, discard seeds next time or reduce jalapeño; if too sweet, add a splash more lime juice.
- 4
Strain the cooled syrup through a fine mesh sieve into a clean jar, pressing on the solids to extract flavor. Discard solids. Refrigerate up to 2 weeks. Yield about 6 oz.
Cocktail assembly
- 5
Fill a copper mule mug or highball glass with crushed ice or large ice cubes to chill.
- 6
In a cocktail shaker (no ice), combine 2 oz vodka, 0.75 oz ginger liqueur (or 0.5 oz ginger syrup + 0.25 oz ginger liqueur), 0.75 oz fresh lime juice, 0.5 oz Swicy concentrate and 2 dashes orange bitters.
- 7
Add a few ice cubes to the shaker and shake vigorously for 8–10 seconds to chill and slightly dilute the mixture.
- 8
Strain the shaken mixture into the prepared mug over the ice. Top gently with 4 oz cold ginger beer, pouring slowly to preserve carbonation and create a layered look.
- 9
Give the drink one gentle stir (1 or 2 turns) to integrate the ginger beer but keep effervescence.
- 10
Garnish with a lime wheel or wedge, a slice of candied or fresh ginger on the rim, and an optional mint sprig. Serve immediately with a straw.
