    Combine spirits

    Add light rum, dark rum, coconut rum, spiced rum, and overproof rum into a cocktail shaker or mixing tin.

    Add juices

    Pour pineapple juice, orange juice, and fresh lemon juice into the shaker with the spirits.

    Add ice and shake

    Fill the shaker about two-thirds with ice (or use cubed ice). Secure the lid and shake vigorously for 12–15 seconds until well-chilled and slightly diluted.

    Prepare glass

    Fill a highball or tiki-style glass with crushed ice or cubed ice to the top.

    Strain and layer grenadine

    Double-strain (or fine-strain) the shaken mixture into the prepared glass over the ice. Slowly pour grenadine down the inside of the glass or over the back of a spoon to allow it to sink and create a gradient 'ghost' red at the bottom.

    Garnish and finish

    Garnish with a pineapple wedge or leaf and a maraschino cherry. Lightly grate a dusting of nutmeg or cinnamon over the top if desired.

    Serve

    Serve immediately with a straw. Note house policy: limit two SEA GHOST cocktails per customer.
