    Prep the rim

    Pour the kosher salt onto a small plate and spread into an even layer. Run the lime wedge around the outside rim of a highball or Collins glass to moisten it. Roll or press the moistened rim into the salt until an even salted edge forms. Set the glass aside.

    Build and shake

    Fill a cocktail shaker with ice (about 4–5 large cubes). Add 2 oz blanco tequila, 2 oz fresh grapefruit juice, 0.5 oz fresh lime juice, and 0.5 oz simple syrup. Secure the shaker lid and shake vigorously for 10–12 seconds until well chilled.

    Serve

    Fill the salted highball glass with fresh ice. Strain the shaken mixture into the prepared glass over the ice. Top with about 2 oz club soda, gently stir once to integrate (one or two gentle stirs).

    Garnish and finish

    Express the oils from a grapefruit wedge over the drink by squeezing it lightly, then drop the wedge into the glass as a garnish. Serve immediately.
