Method
Syrup & Juice
- 1
Measure
Measure 0.75 oz fresh lime juice and 0.75 oz simple syrup and set aside.
Base & Spirits
- 2
Combine
In a mixing glass or cocktail shaker, add 1.5 oz light rum, the measured lime juice and simple syrup, and 2 dashes of Angostura bitters.
- 3
Muddle Mint (short)
Add 6 of the mint leaves to the mixing glass/shaker and give a gentle muddle (1–2 presses). The goal is to release aromatic oils without shredding the leaves to avoid bitterness.
- 4
Add Ice & Shake
Add enough ice to fill the shaker about two-thirds (or about 1 cup cubed ice). Shake vigorously for about 10–12 seconds until well chilled and slightly diluted.
Top & Serve
- 5
Strain
Double-strain the shaken mixture into a chilled Collins glass or highball filled with fresh ice to remove mint bits (use a fine mesh strainer over the cocktail strainer).
- 6
Top with Prosecco
Top the cocktail with 2 oz chilled Prosecco. Pour gently to preserve effervescence.
- 7
Finish & Garnish
Slap the remaining 2 mint leaves between your palms to release aroma, tuck them against a mint sprig and place on top of the drink. Add a lime wheel or wedge on the rim. Optionally add one small additional dash of Angostura bitters on the foam or top for aroma.
