    Prepare glass and muddle

    Place the fresh mint leaves (about 8–10 leaves) into a sturdy highball glass. Add the fresh lime juice (0.75 oz) and simple syrup (0.75 oz) over the leaves. Using a muddler or the back of a spoon, gently press and twist the mint leaves 6–8 times to release the essential oils and aroma. Do not pulverize the mint — light bruising is enough.

    Add rum and ice

    Pour 2 oz light rum into the glass over the muddled mint mixture. Fill the glass roughly three-quarters full with crushed ice (about 1 cup), packing lightly so the drink chills evenly.

    Top with soda and mix

    Slowly pour 3 oz club soda (soda water) over the ice. Use a long bar spoon to gently lift and fold the mixture 6–8 times, bringing the muddled mint from the bottom upward and mixing lime, syrup, rum and soda without over-bruising the mint.

    Garnish and serve

    Add a lime wedge or wheel on the rim and a fresh mint sprig tucked into the top of the drink. Optionally clap the mint sprig once between your hands to release extra aroma before garnishing. Serve with a straw and enjoy immediately.
