    Chill glass

    Place a flute or coupe in the freezer for a few minutes or fill with ice water to chill while you prepare the cocktail.

    Combine base ingredients

    In a cocktail shaker filled about two-thirds with ice cubes, add 1 oz gin, 0.5 oz freshly squeezed lemon juice, and 0.5 oz simple syrup. Using fresh lemon juice is important for bright acidity.

    Shake

    Shake the gin, lemon juice, and simple syrup vigorously for about 10–12 seconds until the shaker is well chilled and slightly frosted. This chills and dilutes the mixture to the correct balance.

    Strain into glass

    Discard the ice or water from the chilled flute or coupe. Double-strain the shaken mixture into the chilled glass (use a Hawthorne strainer and, if preferred, a fine mesh strainer) to remove ice shards and any pulp.

    Top with sparkling wine

    Carefully top the glass with approximately 3 oz chilled sparkling wine. Pour slowly down the side of the glass to preserve carbonation and avoid excessive foam.

    Garnish and finish

    Garnish with a lemon wheel on the rim or floated on top. If using a lemon twist, express the oils over the drink by holding the twist skin-side down, give it a quick squeeze to release oils, run it around the rim, and drop it in or hang it on the glass.

    Serve

    Serve immediately while the sparkling wine is lively and cold. Enjoy responsibly.
