Prepare and combine
Chill a flute or coupe by placing it in the freezer or filling with ice water. In a cocktail shaker add Conniption Kinship Gin (2 oz), lavender syrup (0.75 oz), fresh yuzu juice (0.5 oz) and fresh lemon juice (0.25 oz). If using egg white for a silkier texture, add 0.5 egg white now.

Shake with ice
Add ice to the shaker until roughly 3/4 full. Shake vigorously for 12–15 seconds until the shaker is very cold to the touch and the mixture is well chilled.

Double strain
Remove the ice or water from the chilled flute/coupe. Using both a cocktail strainer and a fine mesh strainer, pour the shaken mixture into the chilled glass, straining out ice shards and any large foam bits.

Add a single lavender sprig resting across the rim or floated on the foam for aroma and visual appeal. Serve immediately.

Use fresh ice for shaking. Clean and chill your glassware ahead of time. Use the fine strainer to ensure a smooth texture and remove ice shards.
