Cocktail

  1. 1

    Chill glass and ingredients

If possible, chill the wine and Aperol in the refrigerator for at least 30 minutes beforehand. Chill the serving glass in the freezer for 5–10 minutes or fill it with ice to cool while you prepare the cocktail.

  2. 2

    Add ice

Fill a large wine glass about three-quarters full with large ice cubes (about 4 cubes). Large cubes melt more slowly and keep the drink from diluting quickly.

  3. 3

    Pour Aperol

Pour 2 oz Aperol over the ice. Pouring first helps the Aperol to settle and allows for a gentle layering effect when you add the wine.

  4. 4

    Add sparkling wine

Slowly pour 3 oz chilled Prosecco (or other dry sparkling wine) into the glass. Pouring slowly preserves bubbles and maintains the desired 3:2 ratio between wine and Aperol.

  5. 5

    Top with soda

Add 1 oz chilled soda water to the glass. Gently stir once or twice with a bar spoon to integrate the soda without losing too much carbonation.

  6. 6

    Garnish and serve

Garnish with 1 fresh orange slice placed on the rim or dropped into the glass. Serve immediately while cold and effervescent.
