Preparation

    Prep the Potatoes

    Peel and chop the potatoes into quarters. Boil in salted water for about 15-20 minutes or until fork-tender. Drain and set aside.

    Prep the Veal

    Pound the veal cutlets to an even thickness. Season both sides with salt and black pepper.

    Chop Ingredients

    Finely chop the shallots and garlic, and chop the parsley for garnish.

Cooking Veal and Sauce (Marsala)

    Cook Veal

    In a large skillet, heat olive oil over medium-high heat. Add veal cutlets and cook for about 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.

    Make Marsala Sauce

    In the same skillet, add butter, shallots, and garlic. Sauté until softened. Pour in Marsala wine and chicken broth, scraping up any brown bits from the skillet. Let it simmer for about 5 minutes until slightly thickened.

    Combine

    Return the veal to the skillet, coating it with the sauce. Cook for an additional 2 minutes to heat through.

    Cook Veal

    In a large skillet, heat olive oil over medium-high heat. Add veal cutlets and cook for about 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.

    Make Piccata Sauce

    In the same skillet, add butter and garlic. Sauté until fragrant. Pour in lemon juice and add capers. Let it simmer for about 3-4 minutes.

    Return the veal to the skillet, coating it with the sauce. Cook for an additional 2 minutes to heat through.

Serving

    Plate the Dish

    On a serving plate, place a portion of boiled potatoes. Top with veal and the sauce (either Marsala or Piccata). Garnish with chopped parsley. Serve immediately.
