Prepare the Pasta

Cook the Tortellini
Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente, usually around 3-5 minutes. Drain and set aside.
Cook the Pork Belly

Sauté the Pork Belly
In a large skillet over medium heat, add the diced pork belly. Cook for about 5-7 minutes until crispy and golden brown. Remove from the skillet and set aside, leaving the rendered fat in the pan.

Prepare the Sauce

Make the Pecorino Cream Sauce
In a separate bowl, whisk together the heavy cream and grated pecorino cheese until smooth. Season with fresh cracked pepper to taste.
Combine and Serve

Mix Everything Together
Add the cooked tortellini and browned pork belly to the skillet with mushrooms and peas. Pour the pecorino cream sauce over the top and gently toss everything together until well coated and heated through, about 2-3 minutes.

Divide the tortellini carbonara among serving plates. Add extra fresh cracked pepper on top if desired and serve immediately.
