Kebab Preparation

    Prepare the Steak and Vegetables

    Cut the sirloin steak into 1-inch cubes. Core and seed the poblano peppers, then cut them into 1-inch pieces. Peel and cut the red onion into wedges.

    Wrap Bacon Around Steak

    Take each cube of steak and wrap a slice of bacon around it. Secure with a toothpick if necessary.

    Assemble Kebabs

    On skewers, alternate the bacon-wrapped steak, poblano pieces, and red onion wedges. Aim for 3-4 pieces of each on each skewer.

Cooking Rice

    Rinse the Rice

    Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a saucepan, combine 1 cup of rinsed basmati rice, 2 cups of water, and 1 tsp of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed. Fluff with a fork and let it sit covered for an additional 5 minutes.

Making Hummus Yogurt Dip

    Combine Ingredients

    In a mixing bowl, combine 1 cup of hummus, 0.5 cup of Greek yogurt, 1 tbs of lemon juice, 1 minced garlic clove, 0.5 tsp of salt, and 0.25 tsp of black pepper.

    Mix Well

    Stir until all ingredients are well combined and smooth. Adjust seasoning as needed.

Grilling Kebabs

    Preheat Grill

    Preheat your grill to medium-high heat.

    Grill Kebabs

    Place the assembled kebabs on the grill and cook for about 10-12 minutes, turning occasionally, until the steak is cooked to your desired doneness and bacon is crispy.

    Serve

    Remove kebabs from the grill and let them rest for a few minutes. Serve with basmati rice and hummus yogurt dip.
