Prepare the Base

    Cook the Basmati Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of basmati rice, reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed. Fluff with a fork and set aside.

Cook the Protein

    Cook the Chicken

    In a skillet over medium heat, add cubed chicken breast. Season with salt and pepper to taste. Cook for about 7-10 minutes or until fully cooked, stirring occasionally. Remove and set aside.

    Cook the Shrimp

    In the same skillet, add shrimp and cook for 2-3 minutes until pink and opaque. Remove and set aside.

    Cook the Salmon

    In the same skillet, add cubed salmon. Cook for about 4-5 minutes until cooked through, turning gently. Remove and set aside.

Assemble the Bowl

    Combine Ingredients

    In a large bowl, layer the fluffed basmati rice, followed by the cooked protein of your choice (chicken, shrimp, or salmon). Add diced mango, cucumber, shredded carrot, corn, and black beans.

    Add Toppings

    Top the bowl with tortilla strips, chopped cilantro, and drizzle with jalapeño ranch dressing.
