Method

Pork Porterhouse

    Prepare the Pork Steaks

    Take the pork porterhouse steaks out of the refrigerator and let them come to room temperature for about 30 minutes before cooking.

    Season the Pork

    Rub the pork steaks with olive oil, then season generously with salt, black pepper, garlic powder, and fresh thyme on both sides.

    Cook the Pork

    Heat a large skillet over medium-high heat. Once hot, add the pork steaks and cook for 4-5 minutes on each side until golden brown and cooked to your desired doneness. Remove from heat and let rest for 5 minutes before serving.

Brussels Sprouts

    Prepare the Brussels Sprouts

    Trim the ends of the Brussels sprouts and cut them in half. Mince the garlic.

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove and crumble the bacon, leaving the rendered fat in the skillet.

    Sauté the Brussels Sprouts

    In the same skillet with the bacon fat, add olive oil and sauté the Brussels sprouts and minced garlic for about 8-10 minutes until they are tender and slightly caramelized. Season with salt and black pepper. Stir in the crumbled bacon before serving.

Butternut Squash

    Prepare the Butternut Squash

    Peel, seed, and cut the butternut squash into small cubes.

    Roast the Squash

    Preheat your oven to 400°F (200°C). Toss the butternut squash cubes with olive oil, cinnamon, salt, and black pepper in a baking dish. Spread evenly and roast for 25-30 minutes, stirring halfway through until tender and slightly caramelized.

Mashed Potatoes

    Prepare the Potatoes

    Peel and quarter the potatoes, then place them in a large pot and cover with cold water.

    Cook the Potatoes

    Bring the water to a boil and cook the potatoes for 15-20 minutes until fork-tender. Drain and return to the pot.

    Mash the Potatoes

    Add butter, heavy cream, salt, and black pepper to the drained potatoes. Mash until smooth and creamy. Adjust seasoning to taste.

Red Wine Chimichurri

    Combine Ingredients

    In a bowl, combine finely chopped parsley, red wine vinegar, olive oil, minced garlic, red wine, red pepper flakes, salt, and black pepper.

    Stir the mixture well until all ingredients are combined. Adjust seasoning if necessary.
